What it means

The AI part is for the steps where a fixed rule is not enough: reading a customer message and working out what it is about, pulling the order number out of a photo, drafting a reply for a person to approve.
What gets automated in practice

That depends entirely on the task, and anyone quoting you a number before looking at your process is guessing. The honest way to find out: pick one task, count how many minutes it takes and how often you do it, and multiply.
